Here we go guys! Another week is upon us and one thing is for sure. WE. HAVE. TO. EAT. That’s why I’m sharing this week’s meal plan for my family. Here is week 12 in the meal plan roundup! Our plan is a little short this week due to planned outings for the kids (who are on Spring Break) and for ourselves (date night outing.) However, that’s the great things about having a plan.

You should plan meals around the week’s schedule.

This will vary per person and family.

As much as I love and find enjoyment in cooking, sometimes I just don’t feel up to it. Yesterday, I fixed an 8 pound roast for our Sunday dinner along with mashed potatoes and roasted corn. It was Sunday and I felt relaxed and it was the perfect time to cook. But this doesn’t happen most week days. No worries, at least I’m starting the week of with cooked food. No complaints here. I just won’t be cooking any big meals this week and am looking forward to eating out later in the week. So what’s for dinner?

A very old recipe but goodie, is on our plan for the week. Red beans and rice is a favorite around here. I like that it’s a one pot meal, too. It features my son’s favorite food…rice. That little boy requests rice almost everyday. So, I know you’re looking forward to seeing what Rabideaux’s sausage is, but Sebastian is only worried about the rice. My recipe for cooking red beans involves, if possible, soaking the beans overnight or at least a few hours before cooking them. That’s an old trick I learned and I always cook them that way. For ingredients, I use some type of meat like sausage and sometimes bacon too. Additionally, I add white and green onions, garlic, season all, and garlic powder. It takes me approximately 2 1/2 hours to cook red beans and rice. Though it takes a while, it’s mostly just stirring and adding water as needed. Definitely start these babies before 5:00 o’clock. Easy peasy!

I’ll also roast a chicken or some chicken this week. I haven’t decided if I want to roast a whole chicken or just chicken breasts. I like roasting chicken because you can place it in a dutch oven or on a sheet pan, season it, and then bake it. Easy right? I do find that you need lots of seasoning to have enough flavor so keep that in mind when roasting chicken.  I’ll add in some baked potatoes for the kids and have a vegetable to go along with it.

Lastly, we will have a taco night at some point. Taco night is pretty simple, especially since now, most times, I use 2 Sisters Salsa, instead of my own Ole’ Goodie Salsa. Weird huh? No. That salsa is just REALLY good and I don’t have to lift a finger.

It’s okay to find shortcuts when you cook. Pick your battles.

I will make my own tortilla chips…maybe or I might grab a bag. Who knows?! One thing is for sure. We have a meal plan and I’m excited to go at it another week.
