Well, well, well. There is a new meal plan for the week and I’m so happy to share it with you. For over a month now, I’ve been without an assistant to help with things around this little blog. That has made posting our weekly meal plan on the blog impossible. I try to do it all but am only able to do so with a full team. Thankfully, it looks like I have a new assistant on board to help things run more smoothly around here. Delegating is not all about having tasks completed for you but also about accountability. Accountability is why I’m able to share my meal plan with you today. Here’s what we’re cooking!

About a month ago, Brandon and I went to a cooking class at a local Rouses Supermarket. There we met a really great chef and equally good story-teller, Chef Nino. He prepared a few dishes and one in particular caught my attention – 15 Minute Shrimp Tomato Sauce. I cooked it one time at home and will be adding it back to the menu tonight. The ingredients are super simple – shrimp, tomatoes, basil, pasta, parmesan, and seasoning. Easy-peasy! The last time I prepared this meal I had to devein my shrimp so the whole process took longer than 15 minutes. Sometimes prepping food can take time so that’s a part of the process. Let’s hope the family is up for shrimp pasta this week because it’s on the menu.

No week is complete without cooking pan-seared steaks and roasted veggies. Nine times out of ten, Brandon does all the prep work and cooks the steaks. I’m sort of the sous chef for the evening. How wonderful! I’ve gotten spoiled to having Brandon in the kitchen on these days. We’ve been married for over 11 years and it’s so nice to have my husband around cooking, especially, in the kitchen. I love to cook so it’s been nice to share details with him too! I always take care of any additional sides that we eat with steaks. Again, easy-peasy!

One thing we haven’t eaten in a while that we’ll be having this week is tacos. Beef tacos, Spanish rice, and chips and salsa are also on the menu for the week. Here is the recipe I like to use to cook my Spanish rice. If I don’t have time to make my own homemade salsa2 Sisters Salsa is quick and still very tasty. If you’re really feeling “Martha Stewart – esque”, then go ahead and make your own homemade tortilla chips. Add in blackberry jalapeno margaritas if you dare! It’s hard to go wrong on taco night.Everyone loves it!
