Well, it happened again! I had company 2 weekends in a row and meal planning fail to the waist-side. Did I cook? Yes. One of the things I cooked was a BIG seafood gumbo. Seriously, it’s the biggest gumbo I’ve ever fixed.

So, yes, I cooked. I just didn’t have time to post the full list here on the blog. Nonetheless, I’m back with the meal plan for the week!

This Saturday is our anniversary and so I thought it’d be a good time to fix Ina Garten’s Company Pot Roast. It’s a favorite for my husband so what better week to cook it then this one? I do make some modifications to the recipe to make it the way we like. If you decide to try this meal, feel free to ask questions. Of course, what’s a roast without mashed potatoes and green beans? I like to whip the potatoes to make them extra smooth and pretty. Also, we’ll need bacon and garlic to make the best green beans.

Of course, no week is complete around here without steaks. They are so easy cook pan-seared and the special part about the process is “B” cooks the steaks. Yep, Brandon cooks…steaks! He claims that I only love the steaks because I don’t have to cook them. He’s mistaken, because even though it’s a pleasure to have him in the kitchen with me, I do really enjoy eating steaks at home. Okay, okay, it is nice to have “B” do the majority of the work. All I cook is the roasted veggies or baked potatoes. It’s nice and it taste awesome – at a fraction of the price!

Brandon’s Perfect Pan-Seared Steak

All the other meals are pretty straight-forward and I’m looking forward to being back on track this week. With company visiting and not feeling well, it’s been a whirlwind the last two weeks. But, I’m determined to get back on track. It’s a balancing act that will never end.

All that matters is that you try again.
