Do you like baked chicken? I’ve found roasted chicken in a dutch oven makes a great meal.

Let me be honest and honestly say I don’t. It has always tasted just okay to me. Nothing special in my opinion. I like food with flavor, and I’ve never thought that baked chicken had much flavor. Sure, it’s healthier for you, but it’s always sorely lacking in flavor. Until I decided to go the roasted route. I found this Lemon, Garlic, and Rosemary Whole Roast Chicken recipe on Pinterest. Elizabeth at Bowl of Delicious promised huge flavor so I figured it was worth a try.

I followed the recipe pretty closely, but honestly, I’m a rebel when it comes to recipes. I always have to add in my own twist, whether that’s using my own spices, extra lemon juice, or whatever. So I did sprinkle Season All on this chicken, because it’s my favorite seasoning. Plus a whole chicken can use all the seasoning it can get. Right? Also, I added red potatoes and carrots to the bottom of my dutch oven. Here is the dutch oven that I have…looks great and is very reasonable compared to other brands. I love this pot! I use every chance I can to cook in it.

The presentation of the roasted chicken in the dutch oven was so pretty with all the fresh rosemary. I was so excited to photograph the chicken and it wasn’t even cooked. It looked and smelled divine! The butter, lemon, and fresh spices really took this recipe up a notch.  Once in the oven, my chicken took about 1 hour and 45 minutes to finish.

This recipe made the best baked/ roasted chicken I’d ever tasted! I found it was very flavorful, and most of all not dry. As long as you don’t overcook the chicken, you shouldn’t have a problem with dryness. Serve this roasted chicken with another vegetable like green beans and fresh bread.
