This super easy recipe is a favorite for the entire family. It's cheap to make and fills up the whole crew. Whip this up for dinner and the family will be begging for more!
Cook 3 cups of rice in a rice cooker or use 6 cups of leftover rice. Let rice cool in fridge until ready to use.
Using a large skillet, add 2 tbsp of sesame oil to pot and warm on medium hight heat. Season chicken tenders lightly with salt and pepper. Cook chicken tenders until brown.
Once cooked through and browned on each side, remove chicken and shred or shop into bite size pieces.
Add 1 tablespoon of butter to skillet. Add carrots and cook until withered or until veggies are soft. Set aside carrots with chicken.
Scramble eggs. Add 1 tablespoon of butter to skillet, and cook eggs well.
Add everything back into skillet and add rice to chicken/carrot mix.
Stir in remaining 2 tablespoons of sesame oil, soy sauce, and green onions. Sprinkle salt and pepper into rice.
Stir constantly until rice is completely brown and all ingredients are fully mixed.
Season with soy sauce, salt and pepper to your own desired taste.
Use leftover rice or minute rice to speed up the process. They will work fine with this recipe.
For extra vegetables, use an onion/pea/carrot mix for a quick but nutritious option.
