Three Bean Taco Soup

This delicious soup is quick to make and is so comforting. It contains a ton of fiber and protein and packs a ton of flavor. Serve with all your favorite toppings and enjoy!

Ingredients

Scale
  • 1 1/2 pounds of ground meat or ground turkey
  • 1 bunch of chopped green onions
  • 1/2 white onion
  • 1 teaspoon of minced garlic
  • 2 cups of beef stock
  • 1 can of black beans
  • 1 can of pinto beans
  • 1 can of red kidney beans
  • 1 can of corn
  • 1 can of Rotel diced tomatoes
  • 1 package of Ranch dressing packet
  • 1 taco seasoning packet
  • Garlic powder
  • Season all
  • Optional toppings: Corn chips, sour cream, green onions, cheese

Instructions

  1. Brown green and white onions in olive oil. Add garlic.
  2. Add ground beef or turkey to pot and cook thoroughly. Drain the grease.
  3. Add taco and ranch packet seasonings to meat with 1/4 cup of water. Bring to a mild simmer. This will take about 2-3 minutes.
  4. Add the can of diced tomatoes, beans, corn, and beef stock to pot. Bring to a simmer. Let simmer for approximately 10-15 minutes. Keep it a mild simmer to keep the beans together.
  5. You’re done! Serve with optional toppings.

Notes

TIP: If you want more juice in your soup add more beef stock. I sort of “eye-ball” mine anyway.
