Do you love salsa and chips but feel like you don’t have time to make your own? Try our kid-approved ole’ goodie salsa and you’ll never buy a jar of salsa again.
Taco night is so much fun around here! There is something for everyone to snack on and it’s also super budget friendly. In addition to tacos, I’ve started making my own Spanish rice and fresh salsa for our chips. Today, I’m sharing a very quick recipe for the salsa. The original recipe came from a good friend, who shared it with me one day last year. What I’ve found is that once you have the right ingredients you can tweak it to your preference. One thing is for sure. You really can’t go wrong with salsa and chips. And when you make it fresh – well, you can’t buy the jar anymore. Once you go fresh, you’ll never go back! How ya’ like that? Once you start snacking on this salsa, it’s like you can’t stop eating it too. Your friends and family will enjoy as well!
Everything is fresh except the canned fire-roasted tomatoes, which really speeds up the process. Also, the flavors really come together nicely if you let it chill for a while. So, prepare your salsa first and put it in the refrigerator. This will allow it to chill properly. I’ll be honest and say that ours doesn’t always make it to the fridge. We have little taste-testers that can’t wait around here. Here is what you’ll need to make your own ole’ goodie salsa.
Ingredients

2 cans of Fire Roasted Tomatoes

1/2 Purple Onion
-
Cilantro Bunch
-
1/2 Red Bell Pepper
-
1/2 Jalapeno
-
1-2 Limes
-
Salt
Directions
-
Chop up purple onion, bell pepper, jalapeño (no seeds), and cilantro (no stems).

Add fire roasted tomatoes and remaining chopped ingredients to a blender.

Squeeze 1-2 small limes over salsa.

Sprinkle approximately 1/2 teaspoon on top salsa.

Blend until smooth and preferred consistency.

Taste and adjust.

Chill for approximately 1 hour. Enjoy!
