Air Fryer Breakfast Potatoes

Sunday afternoons tend to be a little slower for us and so we started a little tradition – brunch. Eggs, bacon, biscuits, and these air fryer breakfast potatoes are the norm for brunch here. Breakfast potatoes are a recipe that my Dad normally makes when he cooks a big weekend breakfast. It’s one of Brandon’s favorites so he decided to re-create the recipe. Yes, for brunch, Brandon is in charge of the breakfast potatoes! However, we love the ease of cooking them in the air fryer. Here’s the recipe that we have found to work well.

Air Fryer Breakfast Potatoes

These crispy air fryer breakfast potatoes should be a part of your Sunday brunch routine. Serve with an omelette, bacon, and of course Mimosas.

Ingredients

Scale
  • 4 Medium, Russet Potatoes
  • 1 tbsp. of Olive Oil
  • 1 tbsp. of Salt
  • 1/2 tsp of Pepper
  • 1/2 tsp Paprika
  • 1/2 tsp of Garlic Powder
  • Cooking spray

Instructions

  1. Scrub and wash potatoes.

  3. Cut potatoes into 1 inch bite sized pieces. breakfast potatoes, brunch ideas, brunch food, breakfast food, air fryer potatoes
  4. Toss potato cubes in seasonings with olive oil.
  5. Pre-heat air fryer to 400 degrees and set for 16 minutes.
  6. Spray cooking spray into bottom of air fryer. breakfast potatoes, brunch ideas, brunch food, breakfast food, air fryer potatoes
  7. Once preheat is complete, toss potatoes into air fryer. breakfast potatoes, brunch ideas, brunch food, breakfast food, air fryer potatoes
  8. Cook for 18 minutes, tossing halfway through cooking time. breakfast potatoes, brunch ideas, brunch food, breakfast food, air fryer potatoes
  9. Once complete, place potatoes on a paper towel lined wire rack to drain any excess oil.

These air fryer breakfast potatoes will become a staple of your weekend brunch routine. They are perfectly cooked but have a little crunch on the outside. I love this method of cooking too because you get all the advantages of a “fried” potato but it’s better for you in the air fryer. If you’re gonna eat potatoes, it should be as healthy as possible, right?
