Meal planning is great for so many reasons. On Mondays, I share my family’s dinner plans to inspire you for the week. Planning meals take advance time and effort. But, when the week is underway, you’re composed and in control of dinner. What a perfect way to end the night!

Last week, I got a late start with the week’s meals.  This past weekend, I was determined to not let that happen again. For me, Sundays are the best day to plan meals and then I grocery shop normally on Monday mornings. Pick a date that works for you to plan meals and grocery shop, then stick to it. These two steps are vital for having an effective meal plan.

Don’t be overwhelmed, you can do it!

This week, the meal plan is pretty straight forward, except for one meal. I am going to try a completely new recipe. Shhh! Please don’t tell my picky family. Even if you have a picky family, it doesn’t hurt to occasionally try a new recipe. It could be a keeper! This week’s new recipe is Slow Cooker Parmesan Herb Chicken. I’ve never tried orzo pasta, but what I like about it is it looks like rice. Everyone likes rice around here so that’s a start. It’s really hard to mess up chicken in a recipe too. My favorite cheese is pepper-jack cheese. I could eat it, and eat it, and eat it some more. Marley really likes it too so it’s a win when I buy it. This week we’ll make homemade burgers and add in pepper-jack cheese, instead of cheddar. Marley and I like all the fixings for hamburgers but not the boys. Just cheese for them. I’ll definitely have cheddar handy, just in case.

Lasagna and tacos are also on the menu for the week. They are both classic meals and super easy to prepare. What I love about cooking tacos is the Spanish rice, of course. Here’s the recipe I use for Spanish rice. As well as, the ole’ goodie salsa is fun for the kids to help with. I let the kids load the blender with all the salsa ingredients.

I do find that the kids are more likely to try food, if they helped to cook it. It’s a win!
